Last night’s dinner was great. Seriously.
Salmon Corn Chowder from Clean Eating Magazine, September/October 2009 This is the fourth time I have made this recipe, and it is one of my favorites…it yields quite a bit so you will be seeing a lot of leftovers this week! This time I made the following variations to the recipe:
-I sautéed onions & celery in skillet & made the roux, then added it along with everything else to my croc-pot on high for 4 hours.
-Instead of: russet potatoes I used sweet potatoes, chicken broth I used veggie broth, frozen corn I used can.
-I added: curry powder, plus extra carrots & celery.
-Served it over 1/2 cup of rice
Dessert was stove-top popped corn tossed w/ evoo cooking spray, cinnamon, 2 T choc chips & 2 T melted peanut butter
Boyfriend liked it so much he couldn’t wait for me to take a picture!
This morning’s breakfast was inspired from Clean Eating Magazine, November/December 2010, ‘Breakfast Phyllo Bites.’ The taste was fantastic, but working with the phyllo sheets sucked! I could not get them to separate! So instead of ‘bites’, I made ‘mouthfuls’
I figured one serving of was 4 ‘bites’ which equals about 1 ‘mouthful’!
Ingredients: 4 egg whites, 1 egg, 1 tsp dried oregano, 1 tsp evoo, 12 cups chopped spinach, 1 clove garlic minced, 1 medium tomato diced, 1/4 cup crumbled feta, phyllo dough, & evoo cooking spray.
Instructions: pre-heat oven to 400, whisk oregano, egg & whites (scramble, remove & cool), saute spinach & garlic (2 min, remove & cool), toss spinach, scrambled eggs & remaining ingredients in mixing bowl. Do your best (and good luck) with taking 1/3 cup of the mixture and folding into a cut sheet of phyllo dough (I cut each sheet into thirds). Bake for 25min on baking sheet, rotating once halfway through. Take one to eat and put the baking sheet in the freezer for 30 min, then place the leftovers in a ziploc bag and put them back in the freezer!

I know I’m not 5…but I’m not the kind of girl to dress up in lingerie, been there done that, I prefer keeping it old school
